Lentil & Mushroom Tacos



Serving: 5 tacos


  • 1 cup cooked lentils

  • 8oz mushrooms finely chopping

  • 1 green pepper chopped

  • 1 red onion chopped

  • 2 tbsp tomato sauce

  • 1tbsp olive oil

  • 1/2 lime lime

  • 2tsp taco seasoning (more if needed)


  1. Add olive oil, green pepper and onion to pan and sauté until vegetables begin to brown.

  2. Add cooked lentils, tomato sauce, juice from 1/2 a lime, and taco seasoning.

  3. Sauté for about 5 minutes until heated thoroughly.
