Veggie Tostadas

Serving: 4 Tostadas


  • Refried Beans

  • 1 Avocado

  • 2tbsp taco seasoning

  • Juice from 1/2 lime

  • 4 tostada shells

  • 1 cup frozen corn

  • 1 zucchini diced

  • 1 jalapeño diced

  • 1tbsp evoo

  • 1 red onion diced

  • Toppings of choice: shredded cabbage, feta, mozzarella, cheddar, olives , sour cream , raw onion, etc.


  1. Add evoo to a pan and warm

  2. Add diced onion, corn and jalapeño to pan and cook for about 6 minutes until onions soften

  3. Mix in taco seasoning until well combined

  4. Add zucchini and cook until warmed, about another 3 minutes

  5. Add avocado to a bowl and mash with a fork. Mix in lime juice and set aside

  6. Warm refried beans and set aside

  7. Prepare tostada shells, spread refried beans first, top with avocado and then the corn/zucchini mixture. Top with toppings of choice
