Serving: 4 Tostadas
Refried Beans
1 Avocado
2tbsp taco seasoning
Juice from 1/2 lime
4 tostada shells
1 cup frozen corn
1 zucchini diced
1 jalapeño diced
1tbsp evoo
1 red onion diced
Toppings of choice: shredded cabbage, feta, mozzarella, cheddar, olives , sour cream , raw onion, etc.
Add evoo to a pan and warm
Add diced onion, corn and jalapeño to pan and cook for about 6 minutes until onions soften
Mix in taco seasoning until well combined
Add zucchini and cook until warmed, about another 3 minutes
Add avocado to a bowl and mash with a fork. Mix in lime juice and set aside
Warm refried beans and set aside
Prepare tostada shells, spread refried beans first, top with avocado and then the corn/zucchini mixture. Top with toppings of choice
