Egg Roll Stir Fry

  • 1/2 cup matchstick carrots

  • 1 can water chestnuts drained

  • 1 can baby corn drained and cut

  • 2 eggs

  • 1/4 cup chopped green onion

  • 1/2 red onion diced

  • 1tbsp garlic

  • 2tbsp soy sauce

  • 1tsp ground ginger

  • 1tbsp seasome oil

  • 1/2cup bean sprouts

  • 1/2tsp rice vinager

  • 1 cup chopped green cabbage

  • 4oz sliced mushrooms

  • Chopped sugar snap peas (optional)

  • brown rice to serve over


  1. Add seasame oil to skillet and warm. Then add onions and sautee for about 3 minutes

  2. Add the carrots, sugar snap peas and cabbage. Sautee another 5 minutes.

  3. Add garlic and mix well to combine

  4. Add remaining ingredients. When adding egg, Push vegetable mixture to the side and crack eggs. Let cook for a couple minutes and then start chopping up egg and mix with veggies. Cook for another 4 minutes

  5. Serve over brown rice
