1/2 Spaghetti squash cooked (see below*)
1/3cup caramelized onion (see below *)
1/2 chopped mushrooms
1tsp garlic
1tsp evoo
Add EVOO to pan with mushrooms. Sauté until softened.
Add spinach and garlic, sauté until spinach is wilted.
Add spaghetti squash and caramelized onions. Cook about 4 minutes until heated thoroughly .
*To Cook spaghetti squash, carefully slice in half lengthwise, drizzle with EVOO, sprinkle salt and pepper, and cook in oven 375 for about 45 minutes until the top begins to brown.. Remoce from oven and let cool. Use a fork to remove the squash from the skin. Discard the skin.
*To carmalize onions, slice onions thinly, sauté in evoo until browned stirring often.
