Southwest Black Bean Burgers

Servings: 4 burger


  • 1 can black beans rinsed and drained

  • 1/2 cup frozen corn defrosted

  • 2/3 cups oat flower (plus more if needed)

  • 1tbsp chia seeds

  • 2tbsp water

  • 2tsp chili powder

  • 2tsp cumin

  • 1/2tsp black pepper

  • 1tsp Paprika

  • 1tbsp fresh lime juice

  • Pinch of cayenne

  • Evoo

  • (Optional: feta crumbles)


  1. Add chia seeds and water to a bowl and set aside for about 5 minutes or until all of the water is absorbed

  2. Add beans to another bowl and mash with a fork (keep slightly lumpy with a few whole beans left)

  3. Add corn, oat flour, chili powder, cumin, pepper, paprika, lime juice, cayenne to the beans and mix together.

  4. Add the chia seeds and mix (and feta cheese if using). If mixture is still super moist, add more oat flour.

  5. Form into 4 balls and smash slightly to form burgers.

  6. Set burgers in fridge for at least 20minutes

  7. Add evoo to pan and fry burgers about 10minutes per side
