Open Face Veggie Sandwich


  • 1 slice of whole grain bread

  • 1 small avocado

  • 2tbsp goat cheese

  • Kalamata olives (I chopped about 5 olives)

  • 1tsp sunflower and pumpkin seed mix

  • 1 small handful arugula

  • 1 small cucumber slices (I used about 5 slices)

  • 1/3 cup matchstick carrots

  • 1/4 cup sprouts

  • Few slices of red onion

  • Drizzle of olive oil and red wine vinager


  1. Mash the avocado and goat cheese together and spread mixture on bread.

  2. Top with cucumber, red onion, carrots, seeds, arugula, olives and sprouts.

  3. Drizzle olive oil and red wine vinager on top
