Mushroom and Crispy Onion Open Faced Egg Sandwich

  • 1 leak (white part sliced)

  • 4 button mushroom sliced

  • 1/2 red onion sliced

  • 1/3 cup matchstick carrots

  • 1 egg

  • 1 slice Gouda cheese

  • 1 slice whole grain bread toasted

  • Evoo as needed

  • Nonstick spray

  • 1 handful spinach

  • 1/2tsp garlic


  1. Set oven to 400

  2. Line oven safe pan with foil and spray with nonstick spray. Set aside

  3. Drizzle evoo in pan. Add leaks and onion. Sautéed until crispy and browned. Remove from pan and set aside.

  4. Add more evoo to pan if needed. Add carrots and sauté for a couple of minutes until warmed. Remove from pan and set aside

  5. Add mushrooms and more evoo to pan. Sautéed until they start to brown. Remove from pan and set aside.

  6. Add more evoo to pan and fry egg.

  7. Add garlic and spinach to pan and sauté until wilted. Remove from pan and set aside

  8. Assemble sandwich. Add toast to oven pan. Top with sautéed spinach and garlic, carrots, mushrooms, fried egg, crispy onions and cheese

  9. Bake for 5 minutes or until cheese is melted
