2 eggs
1 handful spinach
Salt/pepper
1/4 Cup red onion diced
1/4 cup sliced white mushrooms
1tbsp evoo
1tbsp goat cheese crumbles
1 tbsp feta crumbled
1tsp minced garlic
Preheat oven to 350 degrees
Add mushrooms, onions and evoo to skillet and sauté until onions and mushrooms begin to brown.
Add minced garlic and sauté for a couple more minutes.
Spray an oven safe bowl with non stick and add sautéed vegetables
Crumble goat cheese over vegetables
Add spinach on top
Add two eggs to a separate bowl with salt/pepper and feta cheese and whip
Pour eggs on top of spinach
Cook in oven for 30 minutes
