“Fasolakia”

Servings: 2


  • 2 cups frozen green beans

  • 1 yellow onion diced

  • 1 medium russet potsto diced

  • 1 tomato diced into small pieces (I used about 8 small cherry tomatoes)

  • 1tsp dill

  • 1tsp Oregano

  • 1tsp parsley

  • 1tsp garlic

  • 2 bay leaves

  • 1tbsp EVOO


  1. Add EVOO and diced potatoes to pan sauté for about 5 minutes.

  2. Add garlic and onions and sauté another 3 minutes.

  3. Add remaining ingredients, continue cooking until potatoes are softened and green beans are cooked thoroughly.
