Southwest Quinoa Salad


Servings: 5


  • 1 cup cooked quinoa

  • 1/2 cup corn

  • 1 can black beans rinsed and drained

  • 1tsp taco seasoning

  • 1tbsp fresh cilantro

  • 1tbsp evoo

  • 1tsp red Wine vinegar

  • Juice from 1 lime

  • Salt and pepper

  • 1/4cup Greek yogurt

  • Water (as needed)

  • 5 cup mixed greens


  1. add cilantro, lime juice, evoo, vinegar, salt & pepper, Greek yogurt and water to the bowl of a food processor. Start with 1tbsp of water and add more for your desired consistency

  2. Add corn and black beans to a pan with the taco seasoning. Warm for about 7 minutes or until slightly charred and heated thoroughly - let cool

  3. Add lettuce to bowl and top with dressing, corn and beans
