1/2 pasta- any kind
1/2 cup cashews
2tbsp nutritional yeast (optional)
2tbsp EVOO
2 cups chopped broccoli (frozen or fresh)
1/2 red onion diced
8oz sliced white mushrooms
1tsp minced garlic
2tsp garlic powder
2tsp red Pepper flakes
2tsp Italian seasoning
1cup vegetable broth
1can white beans (any kind)

add cashews to bowl and pour boiling water over them until covered. Soak for at least 30 minutes
Drain and rinse beans with cold water
Add vegetable broth, nutritional yeast, garlic powder, red pepper, Italian seasoning, cashews and beans to bowl of food processor and blend for 1 minute. Set aside
Add 2tbsp evoo to skillet and add diced onion. Sauté for about 3 minutes
Add minced garlic and mushroom. Sauté until mushrooms begin to brown.
Pour sauce into skillet and bring to a simmer.
Add sauce over pasta and enjoy!
Note: if sauce needs to be thinker, remove from heat and set aside for about 10 minutes. Add back to heat to warm before serving
