Cowboy Caviar

Cowboy caviar makes the perfect salad or dip for hot summer days! I use a variety of vegetables, beans and feta cheese. I then toss everything in a citrus lime dressing 🍋

Vegetables:

• black beans

• Green pepper

• Feta cheese

• Corn

• Red onion

• Cilantro

• Tomatos

• Scallions

Dressing:

• fresh lime juice

• Dijon mustard

• Red wine vinegar

• Salt & pepper

• Oregano

• Garlic powder

• Good quality olive oil

Chop all vegetable and mix together with feta. Add dressing and mix right before serving. Great with tortilla chips!
