Corn and Black Bean Tacos with Mango Avocado Salsa

  • Tortilla - I used an ezikiel tortilla

  • 1 Cup Frozen corn

  • 1 can black beans drains

  • 1 can mild green chilis

  • 1 package taco seasoning (or 1tbsp homemade taco seasoning)

  • 1tbsp evoo

  • 2 garlic cloves minced

  • 1 white onion diced

  • 1 avocado diced

  • 1/2 cup diced mango

  • 1tsp lime juice

  • Salt & pepper

  • 1/4tsp garlic powder

  • 1/4tsp onion powder

  • Optional: Cilantro

  • Toppings of choice: sour cream, cheese, carrots, black olives, hot sauce, etc.


For tacos:

  1. Add evoo to pan

  2. Add minced garlic and white onion (reserve 1/4 of diced white onion). Cook onion onions begin to brown

  3. Add corn to pan and mix until thawed

  4. Add black beans, green chilis and taco seasoning

  5. Cook about 7 minutes and remove from heat


For mango avodcado salsa:

  1. Add diced avocado and mango to a bowl

  2. Add reserved 1/4 diced onion, cilantro (if using), garlic powder, onion powder, lime juice, salt and pepper to taste
