1 head cauliflower
1 8oz package of sliced white mushrooms
1/2 can black beans rinsed
1tbsp chili powder
1tbsp cumin
1tbsp fresh lime juice
1 garlic clove minced
1 small white onion diced
1tsp EVOO
Salt and Pepper to taste
1tsp onion powder
Chop cauliflower and add to bowl of food processor. Pulse a couple of times until the mixture resembles roughly chopped cauliflower rice. Transfer to bowl and set aside
Add mushrooms to food processor and pulse a couple of times. Add to bowl with cauliflower.
Add EVOO to skillet with minced garlic and chopped onions. Cook until onions are translucent
Add cauliflower/mushroom mixture, chili powder, cumin, salt/pepper, onion powder and lime to skillet and cook until mushroom soften.
Add lime juice and black beans. sauté for another couple of minutes to warm black beans.
