Vegetarian Mushroom Meatballs


Servings 7 meatballs


  • 8oz white button mushrooms

  • 1/2 cup cooked lentils

  • 1 cup oat flour

  • 2 garlic cloves peeled and sliced

  • 1tsp red Pepper flakes

  • 1 egg

  • 1 small yellow onion

  • 1/2cup vegan Parmesan

  • 2tbsp EVOO

  • 1/2tsp Pepper

  • 1tsp Oregano


  1. Add mushrooms, oat flour, lentils, garlic, onion, red pepper flakes, pepper and oregano the the bowl of a food processor and pulse until well combined and slightly chunky still

  2. Preheat oven to 400

  3. Transfer mixture to bowl and mix in egg and Parmesan until we’ll combined

  4. Add EVOO to pan and heat skillet

  5. For mushroom mixture into fairly large balls and place in oil. Cook for about 10 minutes rotating until all sides are seared

  6. Like a cookie sheet with a nonstick baking mat (or foil sprayed with nonstick spray) and add meatballs.

  7. Bake for 15-20 minutes and top with your favorite red sauce before serving
