Adjust ingredients as desired: the following feeds about 5
Mint Quinoa Salad
2 cups cooked quinoa
1 cucumber diced
1cup matchstick carrots
1/2cup fresh mint leaves chopped
Feta cheese as desired
Cherry tomatoes sliced
Kalamata olives sliced as desired
2tbsp evoo mixed with 2tsp red Wine vinegar
1tsp Oregano
Black pepper
Optional: microgreens to top
Mix together all of the ingredients and you have a refreshing salad!
