Mint Quinoa Salad



Adjust ingredients as desired: the following feeds about 5


Mint Quinoa Salad

  • 2 cups cooked quinoa

  • 1 cucumber diced

  • 1cup matchstick carrots

  • 1/2cup fresh mint leaves chopped

  • Feta cheese as desired

  • Cherry tomatoes sliced

  • Kalamata olives sliced as desired

  • 2tbsp evoo mixed with 2tsp red Wine vinegar

  • 1tsp Oregano

  • Black pepper

  • Optional: microgreens to top


Mix together all of the ingredients and you have a refreshing salad!
