Crockpot
1 14.5oz can diced tomatoes (Italian style)
1 chopped green pepper
1 chopped red onion
1 can diced green chilis (I used mild)
1 14.5oz can black beans
1 14.5oz can corn (can use frozen)
2 cups vegetable broth
2 tsp cumin
1.5 tsp chili powder
.5tsp paprika
1 red onion diced
2tsp minced garlic
2tsp onion powder
1tsp pepper
1 bay leaf
Toppings of choice: cilantro, sour cream/greek yogurt, cheese, scallions etc.
Put all ingredient in crockpot except toppings and cook on low for 6 hours or on high for 4 hours.
