Crockpot Taco Soup (Vegetarian and Mediterranean diet approved)

Crockpot


  • 1 14.5oz can diced tomatoes (Italian style)

  • 1 chopped green pepper

  • 1 chopped red onion

  • 1 can diced green chilis (I used mild)

  • 1 14.5oz can black beans

  • 1 14.5oz can corn (can use frozen)

  • 2 cups vegetable broth

  • 2 tsp cumin

  • 1.5 tsp chili powder

  • .5tsp paprika

  • 1 red onion diced

  • 2tsp minced garlic

  • 2tsp onion powder

  • 1tsp pepper

  • 1 bay leaf


Toppings of choice: cilantro, sour cream/greek yogurt, cheese, scallions etc.


Put all ingredient in crockpot except toppings and cook on low for 6 hours or on high for 4 hours.
