Banana Oat Pancakes


Serving: 6 pancakes


  • 3/4cup oat flour (add oats to food processor)

  • 1/4 oats

  • 3 small bananas mashed

  • 2 eggs

  • 1tsp honey

  • Pure Maple syrup to top

  • 1tbsp fresh lemon juice

  • 1/2tsp baking soda

  • 1/2tsp salt

  • 1/2tsp cinnamon

  • 1/4tsp nutmeg

  • 1tsp evoo


  1. Whisk eggs, 1tsp honey and evoo into mashed bananas.

  2. In a separate bowl, combine oat flour, oats, nutmeg, cinnamon, salt and baking soda.

  3. Combine wet and dry ingredients. Don't over mix.

  4. Let mixture sit for 5 minutes to thicken.

  5. Add a drizzle of evoo in nonstick frying pan and add dollops of pancake mixture. Cook on one side until bubbles form, then flip.

  6. Top with pure maple syrup!
