Serving: 6 pancakes
3/4cup oat flour (add oats to food processor)
1/4 oats
3 small bananas mashed
2 eggs
1tsp honey
Pure Maple syrup to top
1tbsp fresh lemon juice
1/2tsp baking soda
1/2tsp salt
1/2tsp cinnamon
1/4tsp nutmeg
1tsp evoo
Whisk eggs, 1tsp honey and evoo into mashed bananas.
In a separate bowl, combine oat flour, oats, nutmeg, cinnamon, salt and baking soda.
Combine wet and dry ingredients. Don't over mix.
Let mixture sit for 5 minutes to thicken.
Add a drizzle of evoo in nonstick frying pan and add dollops of pancake mixture. Cook on one side until bubbles form, then flip.
Top with pure maple syrup!
