4oz cherry tomatoes sliced
3 garlic cloves roughly chopped
2tbsp oregano
1tsp thyme
1tsp Rosemary
Pinch of red pepper flakes
Salt and pepper
2 small lemons
1/3 cup sliced green olives
1/3 cup sliced Kalamata olives
3 tbsp EVOO
2 pieces mahi/any white fish
1/2 red onion diced
1tsp dill
Preheat oven to 400
Drizzle 2 tbsp EVOO on bottom of oven safe dish.
Salt and pepper both sides of mahi and add to dish.
Add chopped tomatoes, olives, garlic, seasonings and 1tbsp EVOO to bowl and mix.
Spoon mixture over fish.
Slice 1 lemon and lay slices on top of fish
Cut other lemon in half and squeeze juice over dish
Cook in oven for 35 minutes
