Guacamole Toast with Veggies

Serving size 2


2 slices Whole grain toast 🍞

2tbs Goat cheese 🧀

2 avocados🥑

1/2 cup diced cherry tomatoes 🍅

1 lime

1/2 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 onion 🧅

4oz mushrooms sliced 🍄

Optional: Fried Egg

Extra EVOO for sautéing


  1. Toast both slices of bread and drizzle with EVOO

  2. Add sliced onions to frying pan and sauté in EVOO for about 8 minutes until carmalized. Remove from pan and set aside.

  3. Sautéed spinach in EVOO. Remove from pan and set aside.

  4. Sauté sliced mushrooms in EVOO until they begin to brown. Remove from pan and set aside.

  5. Add avocados and lime juice to a bowl and mash. Add cherry tomatoes, salt, pepper, garlic powder and onion powder and mix together. Set aside.

  6. Spread 1tbs of goat cheese on each slice of toast and top with guacamole. Then add sautéed spinach, mushrooms and onions (optional: top with a fried egg)


Note: omit goat cheese for vegetarian option.
