Greek Cauliflower Feta Bake


  • 2 heads cauliflower chopped

  • 1 12oz package of cherry tomatoes

  • Handful on Kalamata olives

  • 1 8oz Block feta cheese (I used tomato basil feta)

  • Oregano

  • Olive oil

  • Salt and pepper

  • Fresh mozzarella

  • Parmesan


  1. Set oven to 375.

  2. Steam cauliflower - set aside

  3. Drizzle olive oil on bottom of baking dish.

  4. Add tomatoes and olives and drizzle olive oil over top. Add oregano, salt and pepper. Mix.

  5. At block of feta in the middle of the tomatoes

  6. Bake in oven for about 20 minutes until tomatoes start to wilt

  7. Mix in chopped cauliflower and mix well to combine.

  8. Top with mozzarella and feta, return to oven until cheese is melted
