- 2cups frozen corn
- 1tbsp Mayo (see recipe under “Sauces” for homemade Mayo recipe)
- 2tbsp Greek yogurt
- 1tsp chili powder
- 1tsp ground cumin
- 1/2tsp salt
- 1/2tsp pepper
- 1tbsp fresh lime juice
- 1tbsp EVOO
- Optional: toppings sound as Cotija/feta/Parmesan, lime and cilantro
1. Add greek yogurt, Mayo, cumin, chili powder, salt, pepper and lime juice to a bowl and mix well to combine. Set aside.
2. Add EVOO and corn to skillet and cook until no longer frozen.
3. Stir in yogurt sauce and cook for about 5 minutes to warm.
4. Serve with desired toppings!
