Zoodles:
2 zucchini - spiralizes into zoodles
2tsp minced garlic
2tsp dried basil
1tsp lemon pepper
Salt to taste
1tbsp EVOO
Add all ingredients to pan and sauté slightly until s Zucchini is warm. (About 7 minutes Mixing constantly so the garlic cooks).
Feta Bake:
1/2 red onion sliced
1/3 cup Kalamata olives
3 garlic cloves sliced
1/4cup EVOO
1tbsp Oregano
1/2tsp Salt
1tsp lemon pepper
1 8oz package cherry tomatoes
1/2 block feta cheese
non stick spray
Set oven to 425.
Spray a 8x8 Pyrex dish with non stick spray.
Add feta block on middle of dish and then surround with onions, cherry tomatoes, garlic and Kalamata olives.
Drivle EVOO on top and sprinkle oregano, salt and lemon pepper
Bake for 25-35 minutes until tomatoes soften.
Remove from oven and use a fork or potato masher to mix everything together and flatten the tomatoes.
Combine with zoodles and enjoy!
