Spanakopita Taquitos


Servings: 5


  • 3 packages frozen spinach thawed and drained

  • 1 1/2 cups crumbles feta cheese

  • 4 garlic cloves minced

  • 1tsp crushed red pepper flakes

  • 1tsp fresh lemon juice

  • Tortillas

  • 2 eggs

  • Salt/pepper to taste

  • 1tsp Oregano

  • 1 red onion chopped


  1. Preheat oven to 350

  2. Add onion and minced garlic to pan and cook until onions begin to brown.

  3. Be sure to drain all excess water from spinach and add to pan. Mix until heated thoroughly.

  4. Remove from heat and let cool.

  5. Mix in lemon juice, red pepper, oregano, salt and pepper.

  6. Whip eggs in a bowl and add to spinach mixture.

  7. Add feta cheese and mix well to combine.

  8. Add mixture to tortillas and roll (seal with some egg wash if needed).

  9. Cook for 45 minutes or until tortilla begin to brown.
