Any vegetable will work for this recipe! Leftovers work great!
1 whole grain pita
1tbs pizza sauce
1tbs crumbles goat cheese
1tbs Parmesan cheese
(Optional: 1tbs mozzarella cheese)
1/3cup cooked chopped broccoli
1cup fresh spinach
1/3cup carmalized onions
1/3cup sliced mushrooms
3 green olives sliced
1tbs olive oil
Preheat oven to 375.
Add mushrooms to pan and cook until softened.
Add caramelized onions, broccoli and spinach to pan and cook until spinach has wilted stirring often. Set aside
Add pita bread to cookie sheet with lightly greased foil. Spread pizza sauce on pita bread
Add cooked vegetable mixture
Top with desired cheeses and green olives
Bake in oven for 20 min
Put oven on broil and cook an additional 5 minutes until lightly browned
