1 Cup Frozen peas defrosted (optional: extra for topping)
1/4 Cup roasted almonds (optional: plus more chopped for topping)
3 garlic cloves peeled
1/3 cup grated Parmesan
1 cup packed fresh basil leaves
1/4 cup packed fresh parsley
Juice from 1/2 lemon + 1 tbsp fresh lemon juice
1/3 cup EVOO
any type of pasta
Cook pasta according to package.
Add peas, garlic cloves, Parmesan, parsley, basil, roasted almonds and lemon juice to food processor. Process on low speed. Add EVOO as mixing
Drain pasta and mix in pesto on low heat.
Once pesto is warmed, dish out and top with chopped roasted almonds and extra whole peas
